📝
Ingredients

  • 150 g beef slices
  • to taste mushrooms
  • to taste carrot
  • 1 bowl cooked rice
  • 1.5 tbsp marinade: light soy sauce
  • 0.5 tbsp marinade: dark soy sauce
  • 0.5 tbsp marinade: oyster sauce
  • 0.5 tbsp marinade: sugar
  • 1 tbsp marinade: rice wine
  • 1 tbsp marinade: cornstarch
  • 0.5 tbsp secret sauce: light soy sauce
  • 0.5 tbsp secret sauce: oyster sauce
  • pinch secret sauce: white pepper
  • pinch secret sauce: salt
  • 0.5 tbsp secret sauce: starch
  • 2 tbsp secret sauce: water

👨‍🍳
Instructions

  1. In a bowl, combine the beef slices with all the marinade ingredients. Mix well and let marinate for at least 5 minutes to tenderize and infuse flavor.

  2. Heat a wok or large pan over high heat. Add a small drizzle of oil if needed, then stir-fry the marinated beef in a single layer. Cook just until the color changes and the beef is about 80% cooked. Remove immediately to prevent overcooking.

  3. In the same pan, stir-fry the mushrooms and carrot over medium-high heat until tender and lightly caramelized.

  4. Return the beef to the pan. Stir the secret sauce mixture to recombine the starch, then pour it into the pan. Toss quickly over high heat until the sauce thickens and coats the beef and vegetables with a glossy finish.

  5. Spoon the beef and vegetables over a bowl of hot cooked rice. Serve immediately.

💡 Chef's Tips

  • Do not overcook the beef—quick, high-heat cooking keeps it tender and juicy.
  • Always stir the secret sauce before pouring, as the starch settles at the bottom.
  • For extra aroma, finish with a drizzle of sesame oil or a sprinkle of chopped spring onions.
  • Serve over freshly steamed rice for the best texture and flavor contrast.
